Healthy Nourishing Soups

A nourishing bowl of soup can be enjoyed when the weather is cold or you’re low there’s nothing like a bowl of soup to warm you up. For weight watchers or those wanting to have a light dinner, a healthy soup is an option. So the next time you want something filling, try out one of these easy healthy soup recipes. This low-calorie healthy soup is one of my favorites to fill the stomach with completely loaded with nutrients. All you need is some vegetables, blender and you are set to make the soup. The easier way to add vegetables to your daily meals is to turn them into a delicious soup.

Different kinds of soups that suit different occasions. Thin, clear, or light soup can be used as a starter to a meal. Filling, creamy soups can almost be a complete meal in themselves. Hot and spicy soups taste great on a cold and rainy day whereas chilled soups serve as a perfect start to a summer meal.

Orange Magic Soup

Try out this low calorie Pumpkin, Carrot soup. Both these vegetables are low in calories, pumpkin provides 25 kcal and carrot gives 38 kcal per 100 gm. These vegetables also provide a good amount of beta carotene (vegetarian source of vitamin A). Those suffering from any of the life diseases like hypertension, cancer, diabetes mellitus, cardiovascular diseases and obesity can enjoy this soup.

Ingredients

  1. Pumpkin – 100 gms
  2. Carrot – 60 gms
  3. Shallots – 4 nos
  4. Garlic – 3 nos
  5. Pepper – 1 tsp
  6. Salt – to taste
  7. Butter- 1 tsp

Method

  1. Wash and clean pumpkin, carrot, shallots and ginger
  2. Take a vessel on fire and add 1 tsp butter and stir fry shallots, garlic, carrots and pumpkin.
  3. Saute for a while and add pepper and salt and enough water to cook the vegetables
  4. Once cooked cool the vegetables and blend to a puree, add water and boil for a while.
  5. Enjoy hot soup.

White Surprise Soup

Mushrooms are low-carbohydrate, fat, and with some protein. Mushrooms are rich sources of potassium, a nutrient known for reducing the negative impact that sodium can have on your body. Potassium also lessens the tension in blood vessels, potentially helping to lower blood pressure. In combination with exercise and other lifestyle changes, mushrooms can have an important impact on weight loss. The anti-inflammatory effect of mushrooms has been shown to greatly improve the efficiency of the immune system. Try out this exotic soup.

Ingredients

  1. Mushroom – 2 cups
  2. Low fat butter – 2 tsp
  3. Chopped onions – 1/4 cup
  4. Garlic – 3 nos
  5. Low fat milk – 1/4 cup
  6. Pepper – 1 tsp
  7. Salt to taste

Method

  1. Wash clean and chop mushroom, onion and garlic.
  2. Heat the butter in a deep non stick pan add the sliced onions, garlic and mushrooms and saute in medium flame for 1 minute.
  3. Add 3 cups of hot water, mix well and cook on medium flame for 5 to 6 minutes or till the mushrooms get cooked.
  4. Allow it to cool slightly and blend in a mixer to a smooth puree and transfer  into the deep non stick pan, add salt, pepper and milk , mix well and bring to boil.
  5. Serve hot.
